Maple Glazed Grilled Chicken with Grilled Sweet Potatoes and Zucchini


 For some of you CrossFit FiveStar followers, this post may look similar to one Shawn posted a little while back. It's about the word "can't". The word can't, otherwise known as cannot, is a just word, right? WRONG! It's a dirty word in disguise. It's an evil word masked behind a seemingly innocent word.


So why do we use it? It is an easy way out. Rather than say we won't do something, we just say we can't, which in our minds is much more justified. Harsh reality, huh? Try it, though. Say "won't" instead of "can't" whenever the vocabulary comes across your speech.

"I won't stop drinking soda."

"I won't finish that project for work."

"I won't pick up that 100 pound bar."

"I won't quit smoking."

Really? You won't? Why not? Did you even try? Let's try that one on for size:

"I'll try to drink less soda and more water."

"I'll try to finish that project for work on time."

"I'll try to deadlift that 100 pound bar."

"I'll try to cut back on smoking so I can quit."

Much better, eh? Just by saying you'll try you are more likely to be compelled to do so. You are also more likely to take a better, smarter approach to the situation. Remember the SMART goals? Next time you think you can't do something, replace it with won't. If that sounds totally terrible to you, replace it with you'll try. Then do it!

Now, it's hot out. And I WON'T slave over the hot stove if I can avoid it. But, I'll slave over the hot grill, instead! This recipe for two is simple, quick, and delicious!

Maple Glazed Grilled Chicken with Grilled Sweet Potatoes and Zucchini


The Food
1 Chicken breast, pounded to even thickness and cut in half
1/4 cup maple syrup
1 tbs worchestershire sauce
1/2 tsp allspice
1 sweet potato, cut into thick wedges
1 zucchini cut into 3/4" rounds
2 tbs olive oil
Crazy salt mix to taste

The Prep
Mix the maple syrup, worchestershire sauce, and allspice with a whisk
Coat the chicken with the sauce, saving some for glazing
Toss the sweet potatoes and zucchini with olive oil, season with crazy salt mix (or salt and pepper)
Preheat the grill to high, medium high

The Method
Cook the chicken on the hot grill, direct heat, about 6 minutes per side (until internal temp read 165 degrees)
When you flip the chicken, coat with more glaze
Cook the sweet potato slices on the grill, turning about the same time as the chicken, cook until desired tenderness
Cook the zucchini either on the grill or in a basket, about 10 minutes total, turning occasionally

Three block meal per person when prepared with an 8oz chicken breast (cooked down to 6oz), standard 6-7" zucchini, and a large, 6" sweet potato.
