One of the nice things about fish is how simple it is to cook. Most firm white flesh fishes take on a lot of flavor (similar to chicken). You can pan sear, broil, poach, roast, grill, even microwave most fish in a matter of minutes. You can even pressure cook it to infuse flavor and keep it super moist. I do suggest staying away from using it with slow cookers, however, unless you add it in the last 30 minutes-1 hour (depending on size).
Almond Crusted Grouper and Sauteed Vegetables
The Food
GROUPER
- 1 Grouper filet, 4-6oz
- 1 tbs almond meal
- 1/2 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp allspice
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tbs coconut oil
VEGETABLES
- 1 cup carrots, cut up (I quartered baby carrots)
- 1 cup spinach
- 1/4 cup onion, chopped
- 1 tbs butter
- Olive oil
- Avocado
The Prep
Mix almond meal and spices in a small bowl
Pat fish dry and cover all spices with almond/spice mix
The Method
** start both first steps at simultaneously and vegetables and fish will finish about the same time**
GROUPER
Heat coconut oil in a frying pan over medium-high heat
Sear grouper filet in coconut oil for 3-4 minutes per side
VEGETABLES
Heat butter in a separate saute pan over medium, medium-high heat and soften onion
Microwave carrots with a splash of water in a shallow bowl for 2 minutes
Add carrots to onionWhen you flip the fish, add spinach to carrots and onion
Drizzle vegetables with olive oil
Both the fish and the vegetables should finish at the same time
Put on a plate and top everything with some slices of avocado
