Beef Medley

Let me start of with yes, I know white starchy potatoes don't have much of a place in Paleo cooking. However, I keep getting these gorgeous new potatoes from my CSA every pick up for the last month, and I can't throw them out (and I bet sweet potatoes would be a super sweet substitute :) So we finally got our first cold snap this afternoon (Fall is so close I can smell it!) and this recipe just seemed so fitting. Besides, for someone who's working out pretty intensely on a weekly basis would totally benefit from a protein-carb-fat dense meal such as this!

Beef Medley
The Food
- 2 pounds beef stew cubes
- 1 onion
- 2 pounds new potatoes, quartered
- 1 onion, large dice
- 4 cloves garlic, chopped
- 2 bell peppers, chopped
- 2 tbs Worcestershire sauce
- 1 tbs rosemary
- 1/2 tbs thyme
- Salt & Pepper
- Butter

The Prep
Wash and quarter potatoes, so they are all in the same size (about same size as meat, maybe a bit smaller)
Chop peppers into big chunks, about the size of the potatoes
Salt and pepper beef cubes to taste
Preheat oven to 375 degrees
The Method
Heat about 1 tbs of butter in a cast iron skillet over medium-high heat
Sear meat in batches until brown on all sides, adding more butter if necessary
Set meat aside
Heat another tablespoon of butter in skillet over medium heat
Cook onions and garlic until onions are soft, slightly translucent, and fragrant
Add potatoes, peppers, and meat to skillet
Add Worcestershire sauce, rosemary, and thyme
Mix so everything is incorporated, add more salt and pepper if desired
Cover and put in oven for about 45 minutes, until meat and potatoes are fork tender
