Shrimp Soup


Have you ever heard the expression that some of the most important things in your life will happen when you least expect it? Has anything important or life changing happened to you lately? Are you too caught up in your "responsibilities" to notice...?

Sometimes you've got to stop and smell the roses. Don't get so caught up in life. Granted certain responsibilities are, well, responsibilities (like feeding the baby, walking the dog, putting gas in the car). But stressing about things like work, relationships, finances, the ozone layer... can really reek havoc on your body and mind. Dissect each situation one at a time. Remember that you are accountable for your actions, and you have the ability to affect each situation. And don't ever forget, live for you.

And the next time a cute guy or girl flashes you a heart-stopping smile while holding the door for you at the supermarket, you will notice because you weren't obsessing about a project at work. Maybe you'll even strike up a conversation. Exchange phone numbers. Get married and have babies. Hey, I'm just saying :)

So lets keep it simple today with an easy, stress free meal sure to help you kick back and relax!

Shrimp Soup

The Food
- 10oz shrimp
- 1/2 package of frozen spinach, thawed and drained
- 1 cup chopped carrots
- 1 onion, chopped
- 1 tbs olive oil
- 1 1/2 cups chicken broth
- 1 cup water

The Prep
Devein and peel shrimp, including tails

The Method
Heat the olive oil in a soup pot over medium heat
Add the onion and carrots to soften for about 5 minutes
Add the broth and water
Bring to simmer
Add spinach
Bring to low boil
Add shrimp
Once shrimp are cooked through, ladle into bowls and....
